Greek Gyro
You know when you eat a meal and then you can’t stop thinking about that meal until you eat it again? You know my pain then! Ever since we tried a new (at least new to us) Greek restaurant, I have been craving those delicious Mediterranean flavors. Unfortunately, said restaurant is over an hour away, so I decided to make my own and I’m happy I did!
The first time I ever had Greek food was a Gyro from the same place I got my ears pierced. Believe it or not, it was at JC Penney’s! They had a little food stand area with ice cream, big pretzels, popcorn...and Gyro’s. I tasted combinations I had never tasted before and I was immediately in love! As a teenager, I remember eating them at the mall while sitting in an orange booth while watching people go up and down the escalator. Later in life, my husband and I could never leave the Illinois State Fair without eating a Gyro (or two) from our favorite food stand. Now I don’t have to drive so far or wait for the state fair to satisfy my craving AND I can feel better about what I’m putting in my body! What's your latest food craving?

GYRO MEAT 1 lb. Triple S Farms Ground Beef 1 lb. Triple S Farms Ground Lamb 1 small Onion, quartered 1 clove Garlic 2 tsp. Ground Cumin 1 tsp. Rosemary 1 tsp. Oregano 2 tsp. Salt 1 tsp. Black Pepper 1/2 tsp. Red Pepper Flakes, optional Preheat the oven to 375°. You need a food processor to get that gyro meat consistency. I haven’t tried it without using one but I’m sure it would taste wonderful. Pulse the onion and garlic in a food processor until there are no big pieces. Add the remaining ingredients and mix until it has a tacky consistency. Add to an 8 x8 pan and bake for 55 minutes. Immediately, pour off any liquid in pan. Let rest 10 minutes. You can either enjoy now or let it completely cool, slice, and crisp up the edges in a greased skillet. Bonus recipe TATZIKI Grate 1 large English cucumber and squeeze out excess water. Add 4 C. Plain Greek Yogurt, 1 tsp Garlic Powder, and 3 Tbs. GOOD Olive Oil. Chill for 1 hour.
