Mexican Spaghetti & Triple S Farms Meat Balls

Mexican Spaghetti & Meat Balls


1 package Triple S Farms meat balls              1 TBS grated Parmesan cheese

1 small jalapeno pepper, seeded & minced      1 (16 oz) package spaghetti

1 (14.5 oz) can diced tomatoes                      ½ onion, diced

2 T chopped cilantro                                     1 (24 oz) jar of spaghetti sauce

½ - 1 package taco seasoning (according to taste)             

1 package of your favorite shredded cheese  


1.   Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the spaghetti and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, about 12 minutes. Drain well in a colander set in the sink.

2.   Stir together the tomatoes, onion, spaghetti sauce, cilantro, taco seasoning, and Parmesan cheese. Bring to a simmer over medium heat, then reduce to low and simmer 10 – 15 minutes.

3.   Add the meatballs into the sauce. Stir in and allow to cook until the meat balls are hot, about 10 minutes. Spoon the sauce over the spaghetti, and top with a bit of minced jalapeno and some finely shredded cheese.

Servings: 4 large servings, probably with sauce left over! Cost/serving = $4.09.
